The 15% dry for few days before the fermentation that takes place in oak barrels. The 85% is soflty pressed, then the fermentation takes place in stainless steel tanks at a controlled temperature of 12°-14° together with fine lees. After 6 months the wine is assembled, then it rests in bottle for few months.
