Montefalco in the glass
The most representative and well-known wine of Umbria. Its great body and tannins reveal the typical features of a luxuriant soil.
Vinification process
Alcoholic fermentation in stainless steel tanks at controlled temperature with maceration on the skins for about 25 days. Malolactic fermentation in stainless steel. Aging in first passage barriques for at least 12 months and a further 21 months in steel at a controlled temperature. It completes the aging in the bottle for at least 4 months.
Food pairings
Perfect together with aged goat cheeses, rich legume soups with herbs and pork, such as lentils and cotechino or a mixed soup with crumbled sausage and truffle. Rich meat-based dishes such as stewed boar, braised veal cheek or lamb roulade. A serving temperature of 18-20 degrees is recommended.
