Anthaia an Etruscan woman who was not subordinate to men, innovative, tenacious and autonomous. A wine only apparently feminine and delicate which, behind its heady aromas, hides strength and intensity; with a strong character, very fresh, pleasant and well balanced.
Vinification process
The grapes rigorously selected and collected in boxes, are subjected to a soft pressing up to 50% without maceration on the skins. The fermentation in white takes place at a controlled temperature between 14 ° and 16 ° for 3 weeks. The aging on the lees goes on for about three months, before creating the final blend and being bottled.
Food pairings
Excellent together with raw meat or fish, or slightly savory cold cuts with a sweet tendency such as mortadella with pistachio and coppa di testa. A serving temperature of 10-12 degrees is recommended.
